Recipe: Arugula Avocado Salad

​Ingredients:
Baby Arugula
Pear 
Sunflower Seeds (unsalted)
Fennel
Avocado
Sea Salt
Lemon
Olive Oil

Toast the Sunflower Seeds: heat a small pan, add a little sunflower or safflower oil. Once oil is hot, add seeds until they start to toast. Remove from pan. 

Slice the pear and fennel into short, thin strips. 
Cut the avocado into small cubes.
Combine pear, fennel, arugula, avocado and a generous squeeze of lemon and some olive oil into a large bowl and mix until avocado starts to blend into the fruit and veggies. Add sea salt to taste. 

Add toasted sunflower seeds mix (optional) and serve.

Recipe: Scones

Freshly baked scones, right out of the oven, perfect for cooler weather
​(this recipe serves 6) preparation & cooking time approximately 25 minutes

Ingredients:
​chocolate chips & orange rind or currants & orange rind (lemon rind also works)
1-1/2 cups unbleached all purpose flour
1-1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2-1/2 T sugar
4 T butter, cut into pieces
1/2 cup currants, raisins or chocolate chips
1 tsp finely grated orange or lemon zest
1/2 cup yogurt (or buttermilk or sour cream)

Preheat over to 400 degrees. Butter a baking sheet.
In a medium sized mixing bowl, combine the flour, baking powder, salt, baking soda and sugar.Cut in the butter until the mixture is crumbly. Add the raisins, zest and yogurt, stirring until the dough just holds together. Transfer the dough to a lightly floured work surface and pat it into a circle about a 1/2 inch thick. Cut the dough and transfer to baking sheet. Bake for 15 minutes or until golden.

Thanksgiving Sadhana

Savitree and I have been chanting together on Thanksgiving mornings since I started taking her Kundalini Yoga classes in 2007.  She hosted an annual Thanksgiving Sadhana in Evanston and as a student I found it to be a perfect way to start the day… chanting, gratitude, community all before jumping into the hustle and bustle of food prep, family time and football.

Urban Yoga Chicago has carried on this tradition over the years with last year being our first Thanksgiving Sadhana in our UYC home. We planned to offer my 6am yoga class followed by an hour of chanting the mantras of Aquarian Sadhana with our community, but the universe had other plans.
As I was teaching the yoga, I made a turn that locked up the muscles in my back.  I sat frozen in one position for the remainder of the class, trying not to let on that I was sweating through pretty intense back pain.  As we moved into relaxation, I let Savitree know what was going on and when class ended I (not wanting to be a bother/call attention to myself blah blah) suggested that the group move downstairs to begin chanting so I could figure out how to move myself up to standing.  This amazing community would have none of that nonsense!  Instead of chanting mantras of Aquarian Sadhana, they encircled me and Savitree led the group in chanting Guru Ram Das while everyone

offered kind words, healing touch and supportive energy.  Maureen gave me Reiki, 5 year old Lukie lent me his teddy, Larry told jokes and Nancy, our resident Occupational Therapist used her training and skill to get me on my feet. Sait wrapped me in a blanket and gingerly drove me to the Emergency Room and I received phone calls and text messages from everyone throughout the day and weekend making sure I was on the mend.  While it wasn’t what we planned, it was a touching experience and I will always remember how blessed I am to be part of such a kind and caring community.

This year, we will be back to chant the sadhana mantras at 7am on Thanksgiving morning, November 26.  Yogi Tea and refreshments will be provided, please bring some fruit or snack to share. Friends, family and children are always welcome. Thanksgiving Sadhana is a sweet way to experience this beautiful community and chant the sadhana mantras without getting up at 4am (which is pretty cool too!).
